These diagrams are looking good. Do your best to find/access some sectional information on these buildings and diagram the lighting form the interior perspective as well. The exterior diagramming on photos is only locating fenestration and not really telling you anything.
In terms of structure, locating a column grid is step 1 in creating a drawing set for construction. I know no more about the structural systems in the building than I could have gleaned from the plan or a photo.
